Lauretta's apple wrap

The sourness of the apples and the sweetness of the choux pastry is a perfect combination for Christmas. You can serve the apple wraps as dessert, but are also delicious with a hot chocolate.

Ingredients for 4 persons:

  • 4 firm sweet and sour apples
  • 4 tablespoons forest fruit or blackberry jam
  • 100 g flour
  • 100 g sugar
  • 4 eggs
  • lemon juice
  • 90 g butter
  • 2 dl water
  • 2 teaspoons vanilla aroma
  • pinch of salt

Preparation:

Preheat the (convection) oven to 200 °C. Peel the apples and core out the core. Rub the apples with the lemon juice and . put them side by side in a fireproof oven dish or in individual ramekins. Fill the holes in the apples with the jam.

Put 2 dl water with the butter and a pinch of salt in a pan and bring to the boil. Wait until the butter has melted and the water is boiling. Then add all the flour at once and stir with a wooden spoon until the mass comes loose from the bottom like a ball.

Remove the pan from the heat and stir in the eggs one at a time, then the sugar. It should eventually become a soft batter. Use a whisk against any lumps.

Pour this batter over the apples. Place the dish or individual dishes in the oven for 30 to 40 minutes, until the apples are soft and the dough is fluffy and light brown.

Sprinkle the choux pastry with some powdered sugar for an extra wintery touch.
